By request, I’m sharing the recipe for the yummy dessert bars I recently made♥
Grease an 8 x 8 or 9 x 9 inch pan/baking dish.
1 cup butter
1/2 cup brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oatmeal (NOT long-cooking)
1 cup semi-sweet chocolate chips
1/2 cup peanut butter
(OPTIONS: 1 cup dark chocolate chips (and 1/2 teaspoon cinnamon, if desired); 3/4 cup Chunky peanut butter)
I’m thinking raisins might also be good in this!
Melt butter in large saucepan over Med heat. Stir in brown sugar and vanilla. Mix in oats.
Cook over Low heat till ingreds are well blended (2 to 5 minutes, depending on how much peanut butter is used). Essentially, you’re cooking the quick oats in butter, rather than water or milk.
Press half of mixture into bottom of pan—reserve the other half for “topping”.
Melt chocolate chips and peanut butter in small saucepan over Low heat, stirring frequently till smooth. Pour this over oat mixture pressed into pan (“crust”)—and spread evenly with knife or back of spoon.
Crumble remaining oat mixture over chocolate layer, pressing gently. Cover and refrigerate 2-3 hours (or overnight).
Bring to room temp before cutting.
